The actual dealers and stream quality are usually solid now. Way better than a few years back. If a site has Evolution tables, you're probably fine. Pragmatic's not bad either, bit more hit and miss for me on the table vibe though. Biggest difference isn't really the cards or wheel, it's the little stuff - how clean the lobby is, whether the limits make sense, if the high traffic tables are full of slow punters, and whether the site boots you out mid-session when the connection wobbles. That last one does my head in.
From an Aussie player's angle, the time of day matters more than people say. Jump on in the arvo or early evening and some tables are sweet, decent pace, no dramas. Get on later and the busy blackjack rooms can turn into a slog with side bet heroes and people taking ages to decide on a 16. Roulette's usually the easiest if you just want to get in and get on with it. Also reckon it's worth paying attention to minimum bets because some places look beginner friendly till you open the decent tables and they're sitting higher than you'd expect.
What separates the better sites for me is the boring stuff no one wants to talk about - quick cashier, no mucking around on verification, and support that doesn't vanish when there's a stuck bet or a disconnect. If the table experience is basically the same across a bunch of sites, then that's where the real difference is.
